Ingredients

3 eggs, separated

100 gr castor sugar

200 gr all-purpose flour

100 gr unsalted butter(room temperature)

1 tablespoon baking powder

4/5 medium size starking apples, peeled and sliced

the juice of 1 small lemon

milk if necessary

one 22cm. cake tin (greased)

a little icing sugar for decorating

Preparation

Peel and slice the apples, put them in a bowl and sprinkle them with lemon juice (so they will not turn black).

In another bowl, blend together the butter and the sugar, then add the egg yolks and mix well until the mixture turns pale yellow. Add the sifted flour little by little and, if the mixture turns out to be too dry, add some milk to soften it up again.

Whisk up the egg whites and gently fold them into the mixture. Then add the sliced apples and the baking powder.

Transfer the mixture into the cake tin and bake in preheated oven at 180C for about 40 minutes.

Let the cake cool down and, just before serving, sparkle the top with icing sugar.
