Ingredients

440g can (1 pound) chickpeas (garbanzo beans), drained and rinsed

1/2 cup (125 ml / 4 oz) extra virgin olive oil

1 tablespoon tahini (preferably unhulled)

1/2 - 3/4 clove garlic, bruised / smashed

zest of 1 lemon

juice of 1 lemon

pinch of ground paprika (mild or sweet)

pinch of ground cumin

salt and pepper to taste

Preparation

  1. Place all the ingredients in a blender or food processor (but only put in half the oil to start with) and blend

  2. Gradually add the rest of the oil and continue to blend

  3. If texture is too oily add a dash of water and blend

  4. Season with salt and pepper to taste
