Ingredients
-1 boneless skinless chicken breast
-1/4 yellow pepper
-3 mushrooms
-1 teaspoon olive oil
-1 tablespoon soy sauce
-2 tablespoons chicken stock
-1 generous tablespoon peanut butter
-Garlic salt, red pepper flakes, parsley, chives, cinnamon, salt, and pepper
Preparation
- Slice mushrooms and dice peppers.
- Cut chicken breast into 1 inch cubes.
- Heat oil in medium sized skillet over medium heat and add chicken breast.
- Sauté chicken until completely white and starting to brown, then add yellow pepper, mushrooms, and spices (add more or less red pepper flakes for a milder or spicier dish). Stir constantly, and reduce heat when peppers begin to brown.
- Add soy sauce and chicken stock, and cook on low heat for roughly 5 minutes or until chicken is thoroughly cooked. If skillet becomes dry, add a small amount of water or chicken stock.
- Add peanut butter and stir. If eating by itself, this should be the perfect thickness, but if serving over rice, you will need to add more chicken stock or water.
