Ingredients

1 lb. Ground Beef (80/20)

1/4 cup finely chopped red pepper

1 Roma tomato diced

1 medium onion diced

1/4 cup finely minced spinach

Liberal amount of special seasoning (see below)

Special Seasoning:

4 tablespoons chili powder

1 teaspoon garlic powder

1 teaspoon onion powder

1 teaspoon crushed red pepper flakes

1 teaspoon dried oregano

2 teaspoons paprika

6 teaspoons ground cumin

4 teaspoons sea salt

4 teaspoons black pepper

Preparation

  1. In a cast iron skillet over medium heat, cook ground beef until just a small amount of “pink” in the meat remains. Drain all fat but retain 2 tablespoons and add back to the meat.

  2. Add onions, tomato, pepper, and spinach. Mix well and continue cooking over medium heat.

  3. Once meat is completely brown, add a generous sprinkling of special seasoning.

  4. Continue cooking until the tomatoes have disappeared (10 - 15 minutes)

  5. Remove from heat and let stand 5 minutes before serving.
