Ingredients
2 pounds of Halibut or Mahi Mahi
3 Tablespoons Mayonaise (use light for low cal)
3 Tablespoons Chopped Sun Dried Tomatoes packed in Oil
1 1/2 Tablespoons Fresh Lemon Juice
1 teaspoon diced garlic
2 Tablespoons Shredded Parmesan Cheese
2 Tablespoons Olive Oil
Preparation
Pour Olive Oil to coat bottom of roasting pan. In a small bowl combine mayo, sun dried tomatoes, lemon juice, and diced garlic. Place fish in oiled roasting pan, coat fish with the mayo mixuture and sprinkle with the parmesan cheese. Bake for about 20 minutes.
