Ingredients
2 Tbsp. vegetable oil
1 medium onion, chopped
2 cloves garlic, minced
2-3 chipotle chile on adobo, minced
1 Tbsp. chili powder
2 tsp. salt
6 cups chicken broth
2 cups frozen corn kernels
1 - 15oz. can whole tomatoes, undrained and broken up
2-3 large cans breast meat chicken
1/2 cup cilantro leaves
1/4 cup freshly squeezed lime juice
Corn tortilla chips
Preparation
In large saucepan heat oil and saute onion, garlic, chipotle, chili powder and salt until onion softens, about 5 minutes. Add broth and bring to boil. Reduce heat and simmer uncovered about 10 minutes. Add corn and tomatoes simmering about 5 minutes. Remove from heat and add cilantro and lime juice. Serve in heated bowls and sprinkle with broken tortilla chips.
