Ingredients
1 tablespoon olive oil
1 medium onion, diced
1 15-ounce can black beans, washed and drained
1 15-ounce can tomatoes w/chilies or jalepeños
12-16 ounces frozen corn
1/8 teaspoon black pepper
1/2 teaspoon ground cumin
Preparation
In deep saucepan or dutch oven, sauté onion in the oil until transparent. Add remaining ingredients. Cover and simmer for 20 minutes. Serve hot.
