Ingredients

1/2 cup milk

1 egg

Pinch of Rosemary

Pinch of Ground Thyme

Pinch of Nutmeg

1 garlic clove

Salt and Pepper to taste

1 long sandwich roll cubed (or piece of white bread cubed)

Good brown mustard (Koscuisko Spicy Brown recommended)

1/4 cup Parmesan Reggiano cheese

1/4 cup grated cheddar cheese

1/4 cup chopped frozen greens (spinach or collard greens)

Preparation

Preheat oven to 400 degrees.

In small bowl whisk together milk, egg, rosemary, thyme, nutmeg, garlic, salt and pepper.

Cut bread into small cubes about 1/4 inch. Spread mustard on cubes and add to egg mixture. Let bread absorb egg mixture completely. This may take a few minutes.

Once bread absorbs egg, add cheeses and greens to mixture. Then pour in lightly buttered (4x4) baking dish.

Bake until knife inserted comes out clean, and golden crust rises. (25-30 minutes)
