Ingredients

1 grilled seasoned chicken breast. (chilled)

1 1/2 c. chopped romain lettuce or mixed baby greens

2 t dried cherries

1 oz goat cheese

1 slice of sweet or red onion

2 T low fat raspberry salad dressing

Preparation

Slice the chicken into bite size pieces, & set aside. Spread the lettuce on a plate. Crumble the goat cheese & sprinkle over the lettuce, followed by the cherries & onion. Top with the chicken pieces. Serve with the dressing. This can be packed for lunch in a ziplock with the dressing in a seperate small container.
