Ingredients
4 medium Potatoes
3 Spring Onions
2 tblsp Flour
1 Egg
Preparation
Grate potatoes and drain in a sieve for 20 minutes. Squeeze well to remove any excess moisture. Finely chop spring onions and mix with potatoes, flour and egg. Season well. Form into cakes and fry in a little oil. Press down on cakes with a spatula while cooking. Turn when brown and crispy, then cook other side the same. Eat while hot.
