Ingredients
FOR THE SAUCE:
2-3 large tomatoes, chopped
3 garlic cloves, minced
2-4 tablespoons olive oil (or regular olive oil)
1 teaspoon salt
1 teaspoon red pepper flakes
1/4 teaspoon dried oregano
Pepper to taste
2-3 tablespoons water
FOR THE PASTA:
16 ounces pasta (standard size package)
Salt
Olive oil
Preparation
Cook pasta in a large pot of salted boiling water until al dente. Drain pasta & toss with olive oil while hot. While pasta is cooking, chop the tomatoes and mince the garlic.
In a large saucepan combine the garlic, oil, & water, tomatoes, salt, & chili flakes. Heat on high for several minutes. Lower heat to medium and simmer uncovered for about 10-15 minutes, until tomatoes have broken down. Add zucchini (optional) and cook several minutes longer. Toss with pasta and add salt, pepper, and oregano to taste.
