Ingredients

1 large cucumber

1 ripe tomato, peeled and de-seeded

2 teaspoons dried onion flakes

1/8 teaspoon dried garlic flakes

1/4 teaspoon dried oregano

2 teaspoons olive oil

2 tablespoons chopped fresh parsley (or 2 teaspoons flakes)

2 tablespoons red wine vinegar

Preparation

Quarter cucumber lengthwise, then cut into coarse bite-sized chunks. Cut the tomato into coarse bite sized chunks. Combine all ingredients and chill at least an hour before serving. Salt and pepper to taste.
