Ingredients

1 # lean gr. Beef or Turkey

1 med. Red onion, chopped

2 16 oz. cans whole or diced tomatoes

1 c. macaroni, uncooked

1 zucchini, diced

1 10 oz. pkg. frozen veggies that you like

1 16 oz can red kidney beans

3 T. red wine vinegar

1 t. oregano

½ t. each thyme and basil

Garlic salt, salt & pepper to taste

Parmesan or Romano cheese

2 quarts beef stock or 2 cans beef broth and 2 cans water

Preparation

Brown meat and onion together and drain off fat Add tomatoes and simmer about 15 minutes. Add broth & macaroni and bring to boil. Simmer 10 minutes. (If you are not going to serve immediately when done, cook the macaroni separately and add before serving) Add zucchini, veggies, kidney beans, vinegar and spices Simmer another 15 minutes. Sprinkle w/ cheese and serve
