Ingredients
rinsed
[white kidney beans]
8 cups water
1 vegetable>1 chicken bullion
1/2 cup white wine
2-3 cloves garlic> minced
1 T. tomato paste
3 T. parsley>chopped
1 cup small macaroni>ditalini>tubetti>elbow
1/2 cup grated cheese
Preparation
In a 8 qt.stock pot add the water, bullion, beans and the wine. Bring to a boil, cover and simmer for 30 mins. Take out 1/2 the beans and puree them. Return them to the pot and add the garlic, tomato paste, 1/2 the parsley and the macaroni. Simmer uncovered for 30 mins. more until the soup becomes thick and the macaroni is tender. Add some of the cheese and stir to blend. Spoon remaining cheese and parsley on the top to garnish. Serve with a hot crusty bread.
