Ingredients
1 egg
1 cup peanut butter
1 cup sugar
Preparation
Combine ingredients and blend until mixture is smooth. Scoop on to cookie sheet with teaspoon. Flatten with a fork.
Bake at 350 for 10-12 minutes until slightly brown. Let cool on cookie sheet until they can be removed from the sheet in one piece. Due to the lack of flour and high percentage of sugar, these cookies are especially soft until cooled.
This recipe can be doubled, tripled, etc. to fit your needs.
Great for those who can’t eat wheat and/or gluten!
