Ingredients
3-4 Tbsp butter
1 onion, diced
2 cloves garlic, diced
1 tsp thyme
15 oz can tomatoes, diced
2 bay leaves
1/4 tsp cayenne pepper
1/2 lb peeled, deveined shrimp (plus any liquid they came in, up to a cup)
1 tsp tomato paste
salt and pepper to taste
Preparation
Melt the butter in a large skillet. Sauté the onion until soft, then add garlic and thyme. After a minute add tomatoes, bay leaves, and pepper. Cover and let simmer for at least five minutes or shortly before serving. Add shrimp, cover, and simmer for five minutes. Mix in tomato paste, salt and pepper. Serve over rice or polenta (or grain of your choice).
