Ingredients
1 lb. box whole wheat fettuccini (or sphagetti or other pasta)
1 box frozen spinach
1 clove garlic
1 cup cottage cheese
1/2 cup grated parmesean cheese
Preparation
Prepare pasta according to package directions. Meanwhile, place the frozen spinach in a large heavy saucepan with about 1/4 cup water. Crush garlic clove on top. Cover and put over medium high heat until the spinach is defrosted. When pasta has about 5 minutes left to cook, add cottage and parmesean cheeses and allow to simmer. Drain pasta, and serve with sauce.
