Ingredients

1/2 of 38oz. pkg. of Mama Lucia’s cocktail size meatballs

3 sweet peppers (1 each of green, yellow, orange looks great!) chopped in 1" chunks

1 sweet onion, choppped in 1" chunks

SAUCE:

1/2 cup sugar

1/2 cup brown sugar

1 can pineapple chunks WITH juice (no sugar added)

3/4 cup water

3/4 cup apple cider vinegar

1/2 tsp. salt

3 tbls. cornstarch, dissolved in the water

Preparation

• Sauté onion in olive oil until lightly browned. Remove from heat and add chopped peppers. Set aside. • Drain pineapple, reserving juice. • Combine pineapple juice, sugars, vinegar, and salt in a large saucepan. • Dissolve cornstarch in the water and stir into pan. • Heat over med-high heat, stirring constantly until mixture is clear. • Add meatballs, peppers, onion, and pineapple chunks. Simmer for 30 minutes.

Serve with rice.
