Ingredients
8 cloves, minced garlic
1/2 spanish onion, chopped
1 tbsp dried basil
pinch hot pepper flakes
1-28oz can diced plum tomatoes
salt and pepper
1/2 cup parsley, chopped
parmesan cheese, grated
1 lb linguine (or pasta of choice)
Preparation
In large saute pan, saute onion on medium heat until transparent (approx. 4 minutes). Add garlic, basil and hot pepper flakes. Saute for 2 minutes more. Add tomatoes, bring to boil, reduce heat and simmer for 10 minutes.
In the meantime, prepare pasta as per package directions.
Add parsley to tomato mixture. Mix. Add cooked pasta to tomato mixture, toss and pour onto serving platter. Top with additional parsley and parmesan cheese on top.
