Ingredients
1 16 oz. box penne pasta
1 can artichoke hearts, drained and chopped roughly
3 tablespoons virgin olive oil
1 tablespoon minced garlic
1 teaspoon red pepper flakes
2 cups shredded mozzarella or havarti cheese
1/4 cup pine nuts, browned in a dry skillet
Preparation
Work QUICKLY – everything needs to be mixed while the pasta is hot so that the last item–the cheese– will melt! Have everything prepared before you cook the pasta!!
- boil the pasta until al dente
- drain and coat pasta with olive oil
- throw in artichokes, garlic, red pepper and browned pine nuts TOSS GENTLY BUT THOROUGHLY.
- Quickly add the cheese and toss quickly. To aid in melting you can replace the lid to the pot–serve as soon as the cheese melts!!
