Ingredients

1 16 oz. box penne pasta

1 can artichoke hearts, drained and chopped roughly

3 tablespoons virgin olive oil

1 tablespoon minced garlic

1 teaspoon red pepper flakes

2 cups shredded mozzarella or havarti cheese

1/4 cup pine nuts, browned in a dry skillet

Preparation

Work QUICKLY – everything needs to be mixed while the pasta is hot so that the last item–the cheese– will melt! Have everything prepared before you cook the pasta!!

  1. boil the pasta until al dente
  2. drain and coat pasta with olive oil
  3. throw in artichokes, garlic, red pepper and browned pine nuts TOSS GENTLY BUT THOROUGHLY.
  4. Quickly add the cheese and toss quickly. To aid in melting you can replace the lid to the pot–serve as soon as the cheese melts!!
