Ingredients

5 eggs

1 pre-made pie shell

2 large onions (or 3 small)

1/2 cup sliced button mushrooms

1/2 cup brocoli

3 cloves garlic

1 cup cottage cheese (or sour cream)

four slices jarlsberg to cover top of tart/quiche

grated Parmesean to taste

1/2 fresh basil (or 1 tablespoon pesto)

Dry sherry

Salt & pepper to taste

*if you’re up for experimentation, try pink sea salt! It’s mild & minerally taste adds a flavorful texture … and for the salt concious, a little goes a long way …

Preparation

Dice onion & garlic and caramalize with sherry. Add mushrooms & salt/pepper to taste then reduce heat to low. Beat together five eggs and a cup of cottage cheese. Too this, add 1/2 cup fresh basil (if available … a tablespoon of pesto can be substitued for dry or fresh) and a 1/2 cup brocoli. Combine egg mixture with onions & shrooms, mix, then pour into a pre-made pie shell. Add some sliced of jarlsberg to the top with a good dusting of a parmesean blend to the top & bake at 350 for 30 minutes.
