Ingredients
3/4 cup quinoa, uncooked
2 15 oz. cans of black beans, rinsed and drained
1 1/2 cups veg. broth
1 cup corn kernels, frozen
1/2 cup chopped fresh cilantro
1 med. onion, chopped
3 cloves garlic, chopped,
1 t olive oil
1 t ground cumin
1/4 t cayenne pepper
salt & ground black pepper to taste
Preparation
Saute onion & garlic, Add quinoa to pan and add broth. Season the mix. Let it come to a boil and reduce heat. Cover saucepan and allow it to simmer 20 minutes. Then stir in frozen corn and simmer for 5 more min. Add beans and cilantro. Serve.
