Ingredients

Dressing:

2 garlic cloves

2 T balsamic vinegar

1 T maple syrup

1 t dijon mustard

2 t chipotle puree (or more)

1/2 t salt

1/2 t pepper

1/2 c olive oil

Tofu cubes:

1 block of extra firm tofu

sesame oil/chili oil/olive oil

soy sauce

curry powder

3 c cooked quinoa

1 cob corn cooked, corn cut off

2 avocados diced

1/2 c sundried tomatoes chopped

1/3 c toasted pine nuts

1 c shredded aged cheddar

any other veggies in the fridge

Preparation

dice tofu and marinate in oil/soy/curry powder mix. bake at 425F until golden but not too crispy.

blend all dressing ingredients together and season to taste.

Mix all ingredients, quinoa, dressing, and baked tofu cubes in a bowl. Can serve immediately, also good next day when dressing has really soaked into grains.
