Ingredients
1 1/2 cups quinoa
1/2 medium onion, chopped
2 cups broccoli florets, cut into bite-sized pieces
1 cup shredded reduced-fat sharp cheddar cheese, divided 3/4 cup and 1/4 cup
1/4 cup grated parmesan cheese
1 clove garlic, crushed
1/2 tsp paprika
salt and pepper to taste
Preparation
- Preheat oven to 375 degrees.
- Wash and drain quinoa in a fine mesh strainer 2-3 times.
- Combine quinoa with 3 cups of water in a medium saucepan. Bring to a boil, reduce heat and cook for about 15 minutes or until all the water is absorbed.
- Meanwhile, saute onion for a few minutes, and cook broccoli in microwave for about 4 minutes.
- Combine vegetables and spices in a mixing bowl, adding in hot, cooked quinoa, parmesan and 3/4 cup shredded cheddar cheese.
- Mix well and press into an 8x8 baking dish, greased lightly with cooking spray or olive oil.
- Sprinkle with remaining cheddar cheese on top.
- Bake uncovered for 15-20 minutes, until cheese is melted on top.
