Ingredients

1 c. uncooked quinoa

1 package Simply Organic mushroom sauce

1/4 c. cheddar cheese

2 c. spinach

1/2 lb mushrooms

1/2 c. shredded carrots

1/2 c. frozen corn

Preparation

Cook quinoa with vegetable broth and follow directions for mushroom sauce. Chop mushrooms and spinach in food processor. Steam mushrooms, spinach, carrots and corn in sauce pan. Combine vegetables with quinoa and mushroom sauce and cheese in casserole dish and cook in oven at 350F for 40 minutes.
