Ingredients

-2 cups of water

1/4 cup of quinoa

-1/2 cup of potato, cubed

2 tbs carrot, chopped

1 1/2 cups corn (fresh, frozen or canned

-2 cups milk

-1 tsp salt

-dash of black pepper

-1/4 cup of parsley, chopped

butter

Preparation

Simmer quinoa, potato, carrot and onion until tender (about 15 minutes). Add corn. Bring back to boil and simmer another 5 minutes. Add milk. Bring just to boil. Season to taste. Garnish with parsley and dab of butter. Serves 4-6.
