Ingredients

100g quinoa

olive oil

1 tbsp red wine vinegar

1 garlic clove (crushed)

1 tsp ground cumin

100g block feta cheese (crumbled)

1/4 cucumber (chopped)

75g spinach (roughly chopped)

2 spring onions (shredded)

Preparation

  1. Cook the quinoa according to pack instructions. Drain well then toss with 2 tbsp oil, vinegar, garlic and cumin while still warm and season.

  2. Toss through the rest of the ingredients and serve.
