Ingredients
1/2 cup red quinoa
20 english pea pods
2 or 3 mint leaves
1/4 lemon
salt and pepper to taste
Preparation
- cook red quinoa. i use my rice cooker on the white rice setting, with the usual 2:1 water:grain ratio
- juice the lemon into a cup. mix in salt and pepper
- shell peas
- boil a quantity of water large enough that the peas won’t be crowded. add a little salt to this water
- boil peas for 2-5 minutes (depending on how al dente you want them)
- alternatively, you can steam them
- strain peas
- roll mint and chop into strips
- toss quinoa, peas and mint in a bowl. add enough lemon juice to sparsely coat
I like to garnish this with thin lemon slices or mint leaves (if you buy fresh mint at the store you almost always wind up with an excess).
