Ingredients
1 Tbsp. olive oil
half chopped onion
1 stalk celery finely chopped
2 carrots grated
1/2 c. quinoa
1 c. water or veg.or chicken stock
1 bay leaf
grated rind of 1 med. lemon
1 Tbsp. fresh lemon juice
1/2 c. frozen peas
Preparation
Heat oil in non stick pan. Cook onion, celery & carrot for 10 min, stirring occassionally. Rinse quinoa in a strainer under cold water, drain and add to pan. Cook , stirring 1 min. Add water, bay leaf, lemon rind & juice & bring to boil. Cover, and simmer for 15-20 min. Discard bay leaf and add peas. season with salt & pepper to taste.
