Ingredients
1 1/2 C quinoa
2 cups vegetable broth
1/2 cucumber, chopped
tomatoes, chopped
bell peppers, chopped
broccoli
1/3 C lemon juice
1/4 C EVOO
sea salt
pepper
2 cloves garlic
Preparation
- cook quinoa
- once quinoa is cooled, add vegetables
- mix lemon juice, EVOO, sea salt, pepper and garlic and whisk
- Pour dressing on top and mix
