Ingredients

1 1/2 C quinoa

2 cups vegetable broth

1/2 cucumber, chopped

tomatoes, chopped

bell peppers, chopped

broccoli

1/3 C lemon juice

1/4 C EVOO

sea salt

pepper

2 cloves garlic

Preparation

  1. cook quinoa
  2. once quinoa is cooled, add vegetables
  3. mix lemon juice, EVOO, sea salt, pepper and garlic and whisk
  4. Pour dressing on top and mix
