Ingredients

2 cups water

1 cup quinoa

splash of fish sauce (1 tbsp)

crushed ginger (1 tsp)

garlic (1 tsp)

seasame oil (1 tsp)

onion

green and red pepper

Preparation

Boil, cover, simmer for 20 minutes. It’s done when the liquid is absorbed and the grains open up. Dice onion, red and green pepper (about 1/2 cup). When the quinoa is almost done, dump the veggies on top and let them steam to soften just a bit. Or you can add at the end and let it sit for 5 minutes. Stir and serve. A little bit of shredded hard cheese (asiago) is a nice touch.
