Ingredients
2T lemon juice
1/2C or less olive oil
2T minced cilantro
1C canned corn
1/2 C liquid from corn
1/2 C quinoa
1/2t cumin
1 can rinsed black beans
1 small diced tomato
3T red onion - minced
Preparation
Mix first 3 ingredients and 1/2t salt in a small non-reactive bowl - set aside.
Prepare quinoa according to package instructions using corn liquid and cumin to enhance flavor.
Assemble all other ingredients in a large non-reactive bowl. When quinoa is cooled a bit add it to the bowl and toss with dressing
