Ingredients

1 c white quinoa, drained and rinsed

1 3/4 c. water, boiling

kosher salt and pepper

1/2 c. extra virgin olive oil ( I use Persian lime!!)

1 T. lemon juice

1 T. white wine vinegar

2 c. cherry tomatoes, halved

4-6 green onions, thinly sliced

1 c. canned chickpeas, rinsed and drained

1/2 c. chopped parsley

1/2 c. chopped mint

Preparation

Rinse and drain quinoa, bring water to boil and 1/2 t salt. add quinoa, s&p. reduce heat to low until grain is light and fluffy. transfer to bowl. Mix dressing ingredients and add to warm quinoa; after its cooled add in the veggies. toss and serve either room temp or cool.
