Ingredients

1/2 cup quinoa

1/2 t salt

1/8 pepper

2T olive oil and lemon juice

1 garlic clove, minced

1 bunch parsley, chopped

1 tomatoe, chopped

1 cup English cucumber

1/4 cup crumpled feta cheese

Preparation

Cook quinao according to package directions, transfer to a bowl to cool. Mix remaining ingredients in a large serving bowl. Add quinoa and stir gently to combine.
