Ingredients
1 1/2 cups cooked quinoa
2/3 cup fresh lemon juice
1 cup finely diced tomatoes
1/2 cup thinly sliced scallions
1 cup chopped cucumber
1/2 cup olive oil
1 cup chopped fresh flat leaf parsley
1 cup chopped fresh mint leaves
salt and pepper to taste
Preparation
Combine all ingredients in bowl and season with salt and pepper. Refrigerate for 1 hour to meld flavors
