Ingredients

1 cup quinoa

2 cups water

pinch of salt

3-4 medium tomatoes (I like roma), chopped, seeds discarded

5-6 scallions, sliced

handful of parsley, chopped

1 tablespoon lemon juice*

3 tablespoons olive oil

salt & pepper to taste

Preparation

Cook quinoa on stovetop or rice maker. Use 1 cup quinoa with 2 cups water and add a pinch of salt. Cool.

Add olive oil, tomatoes, scallions, parsley, lemon juice and mix. Salt and pepper to taste.

Serve with flank steak.

*can sub in 1 tablespoon of cider vinegar instead of lemon juice.
