Ingredients

Quinoa:

1/2 cup quinoa

1 cup water (to cook the quinoa in)

Onion and Blueberries:

1/2 onion

nutmeg

salt

sugar (optional)

1 Tbsp Merlot or other wine

1/3 cup blueberries

Preparation

  1. Prepare quinoa by adding the quinoa to the water and bringing the mixture to a boil for 15 minutes or until the water has been absorbed.

  2. Add the salt, sugar to a frying pan caramelize the onions almost all the way. here is a tutorial: http://simplyrecipes.com/recipes/how_to_caramelize_onions/

  3. Add the blueberries and nutmeg, and the splash of wine take off the heat and stir the mixture a few times.

  4. Serve and enjoy!
