Ingredients
-2 cups Red (or white) Quinoa
-1 cup TVP ((total vegetable protein)-can be found in the health food section at most stores, Bob’s Red Mill brand is great)
-Salt and pepper to taste
Preparation
Cook the Quinoa as directed on the package (in water or broth depending on your preference). As this is cooking, prepare the TVP seperately (usually just need to add equal parts water to the TVP to re-hydrate it). After Quinoa is cooked, add the TVP and salt and pepper to taste. That’s it! For a little added moisture you could add some olive oil, but it’s great and simple without it as well.
