Ingredients
May adjust quantities or types of vegetables to your taste
1 orange pepper
2 yellow squash
2 Zuchinni
1 small onion (red for color is best and is lower in carbs)
Handfull Mushrooms
Salt/pepper/jerk seasoning to taste
dash Splenda
1/2 tsp fresh lime juice
2-3 tbsp butter (may substitute a cooking spray if you are watching fat grams)
Preparation
Chop Veggies into bite sized pieces. Mix together in a large bowl. Add salt and pepper and jerk seasoning (from prepared jar). Add a dash of Splenda and 1/2 tsp of fresh lime juice. Stir so all veggies are covered. Place bowl in refrigerator for an hour (or overnight if you prefer; the lime juice will prevent discoloration of the veggies)to soak in the marinade.
When ready to cook add vegetable mixture to a “pocket” of tin foil and dot on the butter. Seal pocket. Grill on top shelf of grill for 15-30 minutes depending on the heat of the grill and how “done” you like your vegetables.
