Ingredients

1/2 cup warm water

1 package dry yeast

2 cups warm milk

1/2 cup butter, melted

1 teaspoon salt

1 teaspoon sugar

2 1/2 cups flour

2 eggs

1/4 teaspoon baking soda

Preparation

Pour warm water into a large mixing bowl. Add yeast and sugar to water and let stand for 5 minutes to dissolve, until it begins to get frothy.

Add warm milk, melted butter, salt, and flour to yeast mixture and beat with a whisk until blended and smooth.

Cover bowl with plastic wrap and let stand overnight at room temperature. The mixture will grow.

Just before cooking waffles, beat in eggs and baking soda. Stir until well mixed. Batter will be thin.

Pour batter onto hot waffle iron and bake until done.
