Ingredients
1 1/4 cups Cooked Chicken (not canned!)
1/2 cup finely chopped Celery
1/2 cup finely chopped Onion
1/4 cup finely chopped Green Onions
4 tbsp Mayonnaise
1 tsp Spicy Mustard
1/2 tsp Cumin
1/4 tsp Black Pepper
1/8 tsp Salt
1/4 tsp Garlic Powder (optional)
Preparation
- Boil or microwave the chicken until no longer pink (and until juices run clear. Cut into small pieces.
- Place cooked chicken in a medium to large sized bowl and add the Mayonnaise. Mix thoroughly
- Add the Celery, Onions, and Green Onions. Mix thoroughly
- Add remaining ingredients and mix thoroughly. This recipe tastes wonderful without the Garlic, so you can taste it both before and after. Garlic lovers will of course want to add it!!
- Serve on a bed of lettuce, or on sandwiches with lettuce and tomatoes!
