Ingredients

10 oz can RoTel Diced Tomatoes & Green Chilies

1 cup Instant Rice

1/3 cup Water

15 oz can Black Beans

1 cup (4 oz) shredded Cheddar

Tortillas

Sour Cream

Salsa

Preparation

Heat to boil in saucepan, RoTel, Rice and Water. Reduce heat, cover and simmer one minute. Remove from heat, let sit five minutes or until liquid is absorbed. Stir in Black Beans and Cheddar. Spoon onto Tortilla, roll to enclose, spread with Sour Cream and Salsa, then microwave for 20 seconds. Serve with lettuce and tomato.
