Ingredients

1 TBl. Olive oil

1/2 C. Red Onion-chopped

1/2 tsp. Dried Thyme

1/4 tsp salt

1 lb-(4)Chicken Breast-Slightly pounded, skinned & boned

1/3 c. Seedless raspberry preserves

2 Tbl. Balsamic vinegar

1/4 tsp. Pepper

Brown rice- Instant

Broccoli or asparagus-Steamed

Preparation

Heat oil in non stick skillet. Saute onion to soften. 3 min Mix thyme & 1/4 tsp salt Sprinkle over chicken. Add chicken to skillet- cook 6 min each side. Remove & keep warm.

Add preserves, vinegar & pepper. Stir to melt and combine. Scraping any bits in the pan. Pour over chicken breasts. Serve with rice and green vegetable.
