Ingredients

1 (2 ½ to 3 -pound) chicken, cut ito serving piece

½ cup raspberry vinegar

½ cup dry redwine

¼ cup soy sauce

4 to 5 garlic cloves, finely chopped

1 ½ teaspoons dried, crushed rosemary leaves

Preparation

Preheat oven to 375

  1. Place chicken, skin-side down, in ovenproof baking dish.
  2. Combine remaining ingredients and pour over chicken
  3. Bake in preheated oven until skin is brown and glazed and flesh is tender, about 1 ½ hours, turning once every half hour. Serve with oven roasted potatoes or rice pilaf.
