Ingredients

to taste sherry

5 raspberries

200 gm(s) madeira cake

200 gm(s) vanila ice-cream

1 tsp(s) castor sugar

2 egg yolks

Preparation

First cut out a circle of madeira cake from a slice,Wash 5 raspberries,Put a pot of water onto boil,then simmer.Add 2 egg yolks to a metal bowl and whisk over the heat of the boiling water. Beat the yolks until ribbon stage, then add sugar & sherry and beat faster with whisk until it doubles in size, then set aside. scoop out ice-cream and put on top of sponge cake in middle of plate,pour over sabayon sauce,put a rasperry on top and round the plate space out the others.Blow torch it until brown skin forms and serve .mmmmmmmmmm
