Ingredients
Olive oil
Onions; maybe one or two.
Garlic; two to three cloves.
Zucchini.
Yellow squash.
Eggplant.
Bell peppers.
Tomatoes.
Salt.
Pepper.
Rosemary.
Thyme.
Preparation
Chop the onions and mince the garlice.
Saute in oven proof pot until tender.
Cube the vegetables.
Saute the the squash in batches in olive oil. The do the same with the eggplant. Then the peppers. When browned; add to the garlic and onions.
Add the spices.
Cook in preheated oven at 400 degrees for about one hour.
Take out of the oven and add the chopped tomotoes.
Stir and enjoy hot or cold.
