Ingredients
1C small diced gold bar zucchini
1C small diced green zucchini
1C small diced eggplant
1C small diced red bell pepper
1C tomato peeled (blanched) and diced
1C small diced yellow onion
1C tomato juice (as needed for liquid)
dash of balsamic
Preparation
method
sweat onions, peppers and garlic in pan with oil for about 8 minutes place tomatoes and juice in a pot sear remaining vegetables individually, in order (eggplant, yellow zucchini, and then green zucchini) after each vegetable is seared, add to tomato pot and serve
