Ingredients

Coarse salt

1 pound fresh cheese or pumpkin ravioli (or other)

6 tbs unsalted butter, room temperature

½ cup freshly grated Parmesan

2 tablespoons chopped mixed fresh herbs such as chives, oregano, marjoram, chervil, parsley, basil or tarragon

Freshly ground black pepper

Fresh lemon juice, to taste

Preparation

Bring large pot of water to boil, add ¼ cup salt and cook, stirring frequently, until al dente, 5 to 10 minutes depending on the ravioli (be careful, not good if smooshy). Meanwhile, combine other ingredients in a large bowl. Drain ravioli well and add to bowl. Toss gently until butter is melted and ingredients are well mixed. Add salt, pepper & lemon juice to taste and serve immediately.
