Ingredients

1 shallot, minced

3 tbsp. olive oil

3 tbsp. sherry vinegar

1 tbsp. honey

2 large beets, peeled

4 stalks celery, thinly sliced

3 cu. baby spinach leaves, tightly packed

1 large, ripe avacado, diced

3 tbsp. toasted sunflower seeds

salt & pepper

Preparation

In large bowl, wisk together shallots,oil, vinegar, & honey with salt & pepper. Grate the beets and toss them in the dressing. Add the spinach and celery, and toss well. Fold in the avacado, them taste and adjust seasoning. Sprinkle sunflower seeds on top. Let sit for 1 hr. Serve.
