Ingredients

1 cup white wine vinegar

1/4 cup sugar

1 clove garlic, peeled and minced

1 tbsp grated fresh ginger

2 sprigs fresh thyme

2 tsp olive oil

1 green onion onion, diced

1 small red pepper, diced

1/2 to 1 small jalapeño pepper, seeded and minced

1 tsp salt

2 cups fresh corn kernels

5 scallions, white parts only, chopped

3 tbsp chopped fresh chives

6 or so cherry tomatoes halved

1/2 fresh lime juice

cracked black pepper and salt to taste

Preparation

In a small saucepan, bring vinegar and sugar to a boil, stirring to dissolve sugar.

Cool liquid mixture and add all ingredients.

Give this relish at least 1 hour to get happy!
